Passion Blanche - Sud de France

Vinification

Hand harvested. Pneumatic pressing followed by racking of the must at low temperature. Running off into new 500-liter French-oak demi-muids where fermentation takes place. Aged on lees with stirring. Total duration of aging in demi-muids is 8 months.

Commentary

Sight: Pale yellow color. Smell: Intense, rich nose with notes of white fruit, melon and pear. Taste: A taste similar to its aroma, marked by an apricot and pear attack. Over the length, a harmonious combination of sweet spices and white fruit develop with a nice mineral finish. A wine full of both harmony and contrast: a wealth of mature aromas, an oiliness in harmony with its great vivacity, along with almost chalky mineral notes.
