Vinification

Manual harvest in plastic crates. Mechanical destemming. Fermentation in thermoregulated stainless steel tanks. Daily pumping over. Maceration time: 20-22 days. Aging in one or two-year old barrels.

Commentary

Aromas of wood, spice, leather and raspberry, with a slight menthol note. The palate is an explosion of spices. After airing, notes of oak and smoke appear.
