Vinification

Hand harvested into crates, mechanical destalking, followed by table sorting. Cold maceration prior to fermentation, daily pumping over and hand plunging, delestage during maceration. Fermentation on skins for 25 days at a temperature of 27-28°C. Aged in oak barrels and demi-muids for 12 months.

Commentary

Attractive full flavors of red fruit and spiced notes.
