Vinification

Manual harvest in small crates. Transfer into small capacity wooden vats by gravity flow. Pre-fermentary maceration. Manual punching down. Maceration for 30 days. Aging for 18 months in new oak and one year-old barrels.

Commentary

Intense color, aromas of red fruit, powerful elegant tannins.

Training the vines

The vines are trellised. High foliage-growth allows for perfect ripening of the grapes. Leaves thinned by hand in several passages. The same applies to green harvesting, performed two or three times depending on the season.
