Vinification

Manual harvest in small crates. Mechanical destemming followed by a manual sorting on a table. Fermentation in 40 hl temperature controlled wooden vats. Daily manual punching down. Maceration for 20-22 days. Running off in one year old barrels, then malolactic fermentation.

Commentary

A woody wine, with notes of black fruit, spices and leather. Delightful persistence.
