Vinification

Manual harvest in small plastic crates. Mechanical destemming followed by a table sorting. Fermentation by variety, in 40 hl wooden tanks and demi-muids barrels. Daily manual punching down. Maceration for 15 to 20 days. Direct running-off in one year-old barrels. Malolactic fermentation.

Commentary

Intense, deep, black color, nose of red and black fruit. Several spiced notes and a nice finish.
